This week on Ask Chef, I am giving you my recipe of the Chicken Grill! Have you heard the story of the Chicken Grill? I took part in a black box competition where we had to create a meal out of the ingredients given to us, without know what the ingredients were! We have chicken and bacon. Many people created these extravagant dinner meals, whereas I decided to keep it simple with a really nice sandwich. And guess what? I won the competition. Do you want to know the recipe for my top selling menu item at Ritz Grill?

Here’s what you’ll need:

  • Panini loaf (grab some at your local bakery)
  • Pesto mayo (simply mix together your favourite pesto with mayo)
  • Pre-cooked chicken breast (sliced)
  • Swiss cheese
  • Maple bacon (cooked)
  • Salt & pepper
  • Garlic butter
  • Lettuce
  • Tomato

 

Here’s how you put it together:

You don’t need a panini press for this, you can use a pan on the stove or a tabletop grill! Heat it up and prepare your panini loaf slices by spreading garlic butter on each loaf, flip it and add cheese on each, add chicken and bacon to one side, season with salt & pepper and add it on to the grill. Grill each side for 4-5 minutes or until your cheese melts and your bread is a perfectly grilled. To finish: take the sandwich off the grill, open it up, add in your lettuce, tomatoes, and season once more with salt & pepper. Slice it in half and enjoy with a hot bowl of soup or a fresh salad!
